Apple Crisp


Here’s a little sweetness to start your new year off right.  It’s easy, healthy, tastes like it’s not, and it comes together in less than 30 minutes.


For the apple layer:

3 apples, sliced in 1/4-inch slices

2 T lemon juice

1 T cornstarch

2 t cinnamon

1/8 t nutmeg

1/8 t cloves

1/2 c brown sugar plus 1/2 c water

For the crisp layer:

1/2 c oats

1/2 c flour

1/2 c brown sugar

1/4 t baking powder

1/4 t cinnamon

pinch of salt

1/3 c shredded coconut (optional)

1/4 c chopped walnuts (optional)

1/8 c canola oil (or just enough to get the dry ingredients crumbly)

splash of water, to help the canola oil bind the topping together

Preheat oven to 375. Slice the apples and place them in a bowl of water mixed with the lemon juice.  This keeps the apples from turning brown.  Then mix together the remaining ingredients for the apple layer, place the apples in a tart pan, and drizzle the mixture over the apples. In a separate bowl, mix together everything for the crisp layer. Sprinkle this mixture on top of the apples. Cover with tin foil and bake for 10 minutes. Remove tin foil and bake for another 20-30 minutes more.
